Mini Pumpkin Chocolate Chip Puff Pastry Pies

Mini Pumpkin Chocolate Chip Puff Pastry Pies
Mini pies have been all the rage lately, so when I was asked to join some of my blogging friends for a “Pie Blog Hop” I thought I would try my hand at making them. With pumpkin pie on my brain I ran to Target to buy the ingredients (and a few hundred other unnecessary items I needed). Sorry honey!
But once there I ran into a problem.
Target only had puff pastry dough and no ready made pie crusts. Seriously?! I decided to not let this deter me and to see if the puff pastry would work with my pie recipe. Guess what? It worked, and these mini pumpkin chocolate chip puff pastry pies were created… and boy are they beyond scrumptious!
Easy as Pie
These darling mini pumpkin pies not only get points for being tasty, but they get major bonus points for being easy to make. From beginning to end these were done in less than 30 minutes! I used Libby’s Easy Pumpkin Pie mix and some mini chocolate chips to make the filling. (While I was mixing the filling up I set out the puff pastry to defrost and preheated the oven to 375 degrees.)
This pumpkin pie mix was a game changer for me especially since I had limited time. I simply added the egg and some Carnation evaporated milk like the recipe on the back of the can called for. I added the chocolate chips as a bonus and was ready to make my mini pies!
* Tip-place the pie filling in the fridge to chill if it is too runny.
Once the puff pastry was defrosted enough I laid it out and used my husband’s whiskey glass to cut out mini circles. I figured the round shape would make them feel more pie -ish! One box made 6 mini pies.
Next, I laid 6 of the circles on my wax lined cookie sheet. Then I took my pie filling from the fridge and scooped a small spoonful into the center of each pastry. From here I covered each small pie with a matching puff pastry circle for the top of the small pies.
I then pinched the two pieces together and crimped the edges shut with my fork. Last, I made a slit in the top of each mini chocolate chip pie and gave each one a classic egg wash.
Finally these beauties were ready for the oven. I slipped them in and crossed my fingers that the puff pastry (instead of pie crust) would work. They were ready in about 17 minutes. Right out of the oven they were pretty and looked so yummy. I couldn’t be happier with how they turned out!
